Prickly Pear Marshmallows (10)

Prickly pear marshmallows with lemon zest, made from scratch.

So much more fluffy than the store bought. Redeeming my last marshmallow attempt some two years ago ([link] obviously didn't set correctly hence the jelled juice).

Part of my attempt to cook and/or eat something I've never had before once a week.

I will also say that prickly pears are, well, prickly. My hands are covered in tiny needles. Ahhh.
