Banana Mousse 3

Description

Banana mouse with a chocolate cake bottom and a layer of sliced bananas in between. Garnished with banana chips around the bottom and on top, and topped with spun sugar.

Haven't worked with spun sugar in awhile. Couldn't find my recipe for making the caramel, which was irritating. Just sort of free styled it a bit, and ended up having to throw away the first batch, but the second one was good. I wanted to redo an old one I did: [link] Unfortunately, we had no pistachios, so I made due with bananas. I was looking through my culinary folder of photos and it's so crazy. There's 784 photos in there, and I found out that I've only been seriously cooking for about two years now. It's strange to think about my life before culinary, because it's such a huge part of my life now. I kind of want to go back and re-do some things because I have a better understanding of photography and food now. Hence why I made this and the sushi previously posted. I just want to take the moment to thank everyone who takes an interest in my work- be it in culinary, drawing/painting, sewing, sculpture, etc. I read all comments, regardless if I answer. It makes me a little weepy when I think about things, because it means a lot to me that people take a genuine interest in what I do. So, thank you. I've been thinking for awhile about starting a culinary blog, but I'm still on the fence. I'm a little stingy when it comes to giving out recipes, but if I ever do, I'll be sure to post the link.

Again, thanks for taking an interest.

This looks lovely and I love the plate it's on. :o

As for what you said about being reluctant to give out recipes, I can understand that. Maybe give out recipes to the "easier" and more common things, like your take on a normal chocolate sponge or something. I am ridiculously secretive about my recipes, and I have NO clue why. ;)
